German Apple Pancake p1

1. Mix flour and sugar in a medium bowl.

2. In another medium mixing bowl, whisk the eggs, milk, and vanilla; until combined. Add the liquid ingredients to the dry and whisk until no lumps remain. Set the batter aside to rest for 20 minutes.

3. Preheat the oven to 500°.

4. In a heavy ovenproof 12-inch skillet, melt 2 tablespoons of the butter over high heat.  Add the apples, cinnamon, nutmeg, and cook, stirring until the apples are soft and lightly golden around the edges, about 6 minutes.

5. Add the brown sugar and cook, stirring until the apples are caramelized and very soft, 2-3 minutes.  Add the remaining tablespoon of butter and stir to melt.

5. Working quickly, pour the batter around and over the top of the apples.  Transfer the skillet to the oven and reduce oven temperature to 425 ̊; bake until the pancake is golden brown and puffed, about 15 minutes.  It is okay if the edges of the pancake puff up over the top of the pan.

6. Serve immediately, sprinkle with confectioners’ sugar or drizzled with maple syrup.
