1. Peel and core the apples. Cut each apple into 8 pieces.

2. In a 3 quart saucepan, combine the apples, cider, 2 Tbsp. sugar and lemon juice.

3. Over high heat bring the apple mixture to a boil. Reduce heat to low, cover and simmer until the apples are very tender. About 25-30 minutes.

4. Once the apples are tender, remove from the heat and mash with a potato masher. Test the applesauce and add more sugar as needed.

5. Enjoy!
